Courvoisier works mainly with the four best crus: Grande Champagne, Petite Champagne, Borderies and Fins Bois.
The grapes are harvested in autumn, at the peak of their maturity. Pressing is carried out by our winegrowers immediately after the harvest. The juice obtained will ferment for 7 days transforming the sugars of the grape into alcohol to make wine.
