Our XO is quoted in the international wine magazine Vinum with the following tasting comments :
Interesting nose, with notes of nuts, spices and fruit such as pear, a hint of almond and musk; full-bodied, soft and supple on the palate, with a pleasant, lingering finish; full of elegance and finesse.
This Cognac is produced from Grande Champagne wine.
Straight from the still, the eau-de-vie is kept in new Limousin oak casks during 6 to 8 months. Then, it's transferred to older casks, protected from the light.
This Cognac has to be aged at least 20 years in oak casks to be called XO. We prefer age it during 10 years more. We finally reduce it in order to get a 40 % ABV alcohol product.
