Created in 1920 by Jacques and Robert Delamain, Pale & Dry XO is a direct reference to its diaphanous colour and lightness. The name embodies a strong commitment, unique in the XO category : to produce a Cognac with no added sugar or colouring, aged in old oak barrels and, as a result, lighter in colour and much less marked on the palate by the wood. A century later, Pale & Dry XO remains faithful to this original elegance, patiently allowing the fruit of refined eaux-de-vie to develop in majesty.
Tasting notes from Charles Braastad, Cellar Master :
Nose : Particularly delicate, with scents of vanilla and apricot, enveloped by fresh notes of passion fruits, orange zest and almond.
Palate : Vanilla melts into apricot flavours, underlined by hints of spice and ginger.
Finish : Intense and persistent, the final touch to the perfect balance of this rare Cognac.
"An icon of the House style, Pale & Dry XO is made exclusively from Grande Champagne eaux-de-vie, matured in old 350-liters Limousin oak casks in our centuries-old cellars on the banks of the Charente at Vinade in Jarnac. The gradual and meticulous reduction of the degree of Cognac to 42 % vol. allows us to achieve the perfect balance between power and natural sweetness, emblematic of Pale & Dry XO."
