Tasting notes :
This 2004 vintage comes from the 350-liters G288 cask.
It has a lovely woody, vanilla nose and a discreet bitterness on the palate.
Each year, we vintage 1 cask. This cask is filled with eau-de-vie from white wines distilled on the lees or overloaded with lees, just as they leave the still. This technique of distillation on the lees brings out aromas specific to the lees, which need time to express themselves and mature. It's therefore perfectly suited to our vintages, which we only sell after 20 years' ageing. Our vintages come from a single cask.
We reduce it 3 times during the first 5 years of ageing to reach a ABV of between 40 and 50 % vol. after 20 years. It's un-chillfiltered; it's a Cognac "from cask to bottle".
Only the weather and the cask in which it is kept explain the variations in aroma between our different vintages. The grape varieties and distillation techniques are the same; the master distiller and Cellar Master apply the same production methods.
