Fins Bois Cognac are less suited to long ageing than Cognac made from Champagne or Borderies grapes. Over time, they reveal a less intense aromatic bouquet than the other crus. Nevertheless, the Fins Bois cru, which surrounds the Champagne and Borderies vineyards, has a wide variety of terroirs, giving rise to a number of little gems.
Although the Fins Bois vineyards account for 42 % of the area planted with Cognac appellation wines, Cognac with the "Cognac Fins Bois" AOP is a rarity on the market. In fact, these Cognac make up the vast majority of the young, VS-type categories produced by the trading Houses. These young Cognac account for almost 60 % of Cognac sales worldwide. That just goes to show the importance of Fins Bois Cognac !
