Tasting notes :
The 2005 vintage has a brilliant straw yellow colour.
The nose reveals a complex bouquet combining fruity notes of peach and floral aromas of jasmine. Vanilla and mellow wood add further depth.
On the palate, it's distinguished by its finesse and well-developed grape aromas. Its aromatic intensity is marked but balanced.
The long, elegant finish leaves a lasting impression. A real pleasure for the senses, combining complexity and balance.
Serving suggestions :
with its fruity, floral and woody notes, it's ideal with a mature cheese, a gourmet dessert such as a dark chocolate fondant, a pear tart or an almond dessert to sublimate its vanilla and fruit aromas. Elodie also recommends it with duck breast with sweet spices or pan-fried foie gras with a balsamic reduction for a more sophisticated match.
Know-how :
Grape variety : mainly Ugni blanc.
Vineyards and terroir : Sustainable viticulture, typical Petite Champagne limestone soil.
Maturity control, rapid pressing after harvesting. Pneumatic presses (rapid filling to avoid oxidation).
Fermentation : Control of fermentation temperatures and storage of wines on lees for better conservation without the addition of SO2.
Traditional distillation : With fine lees, very slowly. Cut during tasting.
Inspected by a BNIC officer :
Ageing : A few months in new barrels, then many years in old barrels (French oak from Limousin) in our own cellars.
Reduction : Slow thanks to a specific process.
Filtration : Very gentle to preserve a maximum of aromas.
Bottling : By hand on the family single estate.
Each bottle is counted by the BNIC.
