Situated on the edge of a wood in the commune of Malaville, it belongs to the Grande Champagne area, Cognac's first and best cru. Comprising three valleys, its north-south exposure means it benefits from sunshine all day in summer.
Domaine La Rambaudie's eaux-de-vie are distilled in November in a 25 hectolitres still, with a very slow pour at the end of the toasting process to preserve the rich fruity notes.
Description
Tasting notes by Charles Braastad, Cellar Master :
Nose : notes of ripe cherry, Muscat grape, fresh fig and quince. Subtle hints of vanilla, spices and delicate leather.
Palate : natural sweetness enhanced by notes of rancio, exquisite roundness.
Finish : lightly woody with a hint of pepper.
Style : vibrant and expressive, with remarkable balance.
These eaux-de-vie were distilled on the single estate, in a 25 hectolitres Charentais still with a very slow pouring process. This method, which is particularly important during the second toasting (good toasting), helps to extract the rich, fruity aromas that characterise this Cognac.
Ageing in a damp cellar in Jarnac in old French oak barrels 350 liters.
Limited edition to only 1500 bottles !
