Colour : Amber.
On the nose, this Cognac bears witness to its terroir, with lively yet delicate notes of limestone, old waxed furniture, iris and white flowers. But the age of this Cognac also reveals more tertiary notes, delicate rancio, white pepper, summer undergrowth. The second nose reveals notes of old balsamic.
On the palate, the attack is smooth, progressive and well-balanced, with aromas that prolong the complexity of the nose.
The finish is long, a classic signature, but ultimately remarkable.
This very old Cognac comes from a winegrower in the village of Salles-d'Angles, in the heart of the Grande Champagne region.
The dozen of Dame-Jeanne we were able to buy from this winegrower, who is nearing retirement, come from his father's stocks, which he had placed in Dame-Jeanne several years ago to protect them from ageing. The barrels of this precious Cognac were stored in the basement of the farmhouse, on a dirt floor. Today, this small farm makes its living mainly from maturing.
It was through a Parisian friend, now living in Charente, that we were able to get in touch with this winegrower.
